Early Bird Learning: This slot is beginning to rival our hens for the ahh-factor – just look at little Tommy Richards going about his daily chores, hen in hand.
Mum, Charlotte, told us that Mabel is one of their first BHWT hens adopted in July 2023 from BHWT Team Devon when Tommy was a mere 9 months old! Mabel and friends now live in the heart of Exmoor, free-ranging by day and roosting by night in a stone barn with fresh bedding, which Tommy refreshes daily whilst collecting his eggs. Monies raised from the sale of spare eggs go into Tommy’s eggy bank. Nice work Tommy!
It’s all about Vitamin D
We all know that Vitamin D is the sunshine vitamin, helping our bones, teeth, and immunity. There is research now that indicates Vitamin D may help reduce the risk of SAD (seasonal affective disorder), common during the winter months.
Researchers at Newcastle University have taken a long look at how the concentration of Vitamin D (naturally found in egg yolks, but enhanced when hens have access to sunlight and fed diets enriched with the vitamin) is affected by both storage and cooking methods.
Tom Hill, Professor of Nutrition at the University, led the research and found that eggs stored out of the fridge have a higher concentration of Vitamin D, whilst cooking them also changed the Vitamin D levels. And whilst our hens are kindly supplying us with Vitamin D rich eggs, we can add to their ingenuity by following this list of the top half dozen ways to cook them, with the richest taking top slot:
• Scrambled
• Microwaved
• Poached
• Hard boiled
• Fried

Did you know...
If you added up all the eggs our one million BHWT hens would have laid over a single year you’d be looking at 300,000 million eggs – that’s a whole lot of omelettes! An average commercial laying hen lays 300 a year.
